Hidden Bunny- Lemon and Chocolate Fudge Cake

A rather simple recipe becomes a stunning Easter treat by combining two cakes into one. Imagine the delight when each time you cut a slice a cute bunny is revealed.

Tip: You can cut the fudge cake in to any shape for any other occasion.



  • For the Chocolate Fudge Cake Centre
  • 115g Butter, unsalted at room temperature
  • 150g Dark Brown sugar
  • 3 Eggs
  • 1tbsp Cocoa powder
  • 110g Plain flour
  • 270g Lindt EXCELLENCE 70% Cocoa, melted and cooled
  • 50g Lindt EXCELLENCE 70% Cocoa, finely chopped
  • For the Vanilla Cake
  • 150g Butter, unsalted at room temperature
  • 100g Raw Caster sugar
  • 100g Caster sugar
  • Pinch Salt
  • 1-2tbsp Vanilla bean paste- be generous with vanilla
  • 4 Eggs
  • 250g Plain flour
  • 1tsp Baking powder
  • 60ml Milk
  • 80g Lindt EXCELLENCE 70% Cocoa, chopped
  • For the syrup
  • 50g Caster sugar
  • 100ml Water
  • Optional Little Cognac or Galliano Vanilla
  • Optional to finish Little Ganache


Step 1.

Preheat the oven Preheat the oven to 175°C

Step 2.

For the Fudge Cake Centre Combine the butter and dark brown sugar and mix until pale. Add eggs one at the time, mixing well after each addition.

Step 3.

Sift Together the flour and cocoa and gently mix into the butter mixture.

Step 4.

To finish the batter Add the melted chocolate. Scrape down the sides and stir in the finely chopped chocolate. Spread the mixture onto a tray lined with baking paper. (33x24cm)

Step 5.

Bake For 15 minutes or until a dry skin forms but the centre remains soft to touch. Set aside to cool slightly and then place in the freezer for 30 minutes.

Step 6.

Using An Easter themed cookie cutter of your choice, cut out shapes and place them on top of each other, forming a log. (Our Maitre used a bunny head cutter 4cm tall) Place cut outs on top of each other, creating a log that fits the length of the loaf tin. (23x12x7 cm) Place in the freezer until vanilla cake mix is ready, (this prevents the centre from overbaking in the second bake) Tip: The off cuts of the fudge centre are stunning mixed with vanilla ice cream

Step 7.

For the Vanilla Cake Cream the butter, sugars and salt until light and pale.

Step 8.

Add The eggs one at the time, mixing well after each addition. Once incorporated, beat mixture until pale. (about 4-5 minutes)

Step 9.

Sift The flour and the baking powder and mix into the butter mixture along with the milk.

Step 10.

Last Mix the chocolate chunks dusted with little flour which prevents them from sinking and then mix through the cake batter.

Step 11.

Assembly Place the fudge centre standing up into the centre of a greased and baking paper lined loaf tin. (23x12x7 cm) Gently spoon cake batter around the fudge cake being careful not to move the chocolate centre.

Step 12.

Bake At 180°C for around 45 minutes or until a skewer comes out clean. Allow to cool slightly in the tin.

Step 13.

To finish While cake is baking, boil together all the ingredients for the syrup and set aside. Brush cake with syrup. Cool fully.

Step 14.

To serve Top with some chocolate ganache and decorate
