Reindeer Speculoos Bark


The warm scent of exotically spiced caramel biscuit in decadent dark chocolate makes a delectable festive treat or exceptional homemade gift.

  • 55g Butter ; 30g Brown sugar 15g Golden syrup ; Little vanilla ; 75g Plain flour Pinch Salt 1tsp Speculoos spice* *Speculoos are spiced with a festive mixture of spices such as cinnamon, coriander, ginger and all spice. Spice mixes are available in good spice shops or simply using some ginger and cinnamon could make a good substitute. ;
  • 3x180g Lindt Dessert Premium Dark, tempered ; 70g Speculoos, chopped ; Little Lindt Chocolate for the eyes and antlers Little Red Marzipan or icing for the noses


Step 1.

For the Speculoos (Spiced caramel cookies)
Combine the butter, brown sugar, golden syrup and vanilla. Mix until pale.

Step 2.

The dry ingredients and combine to form a dough.Place in the fridge to rest for 30 minutes.Break into portions

Step 3.

Roll out
To about 3mm thickness.Bake until golden brown at 175°C. (approximately 8-10 minutes)Set aside to cool.

Step 4.

For the slab
Mix in some chopped Speculoos into the chocolate.Spread evenly onto a baking paper lined tray.Top with some crushed Speculoos cookie crumbs and allow to set.

Step 5.

For the Reindeers
Pipe some eyes and antlers onto a baking sheet and allow to set.

Step 6.

Onto the slab and serve on a festive table.
