Chocolate Budino with Mango Coulis

Rich chocolate pudding finished with some mango coulis and just a hint of thyme.

A true chocolate delight.

  • 275g Milk
  • 50g Lindt Dessert 70% Cocoa 
  • 15g Cornflour
  • 40g Light brown sugar
  • Pinch Sea salt
  • 20g Butter, unsalted

Mix

A little milk with the cornflour to create a slurry. This will prevent lumps in your pudding.

Bring the milk

Salt and sugar to the boil. Add the chocolate and cornflour mixture.

Boil

On medium heat for about 2 minutes or until mixture starts to thicken.

Take off the heat and mix in the butter.

Divide

Pudding into serving dishes or greased moulds.

Place

In the fridge to set for 4 hours.

To serve

Top with some mango puree blended with a touch of lemon thyme.
