Chocolate Fudge Cookie with Mint Crème
Makes 12 cookies

Dark chocolate and mint is a classic combination celebrated in this rich and decadent cookie. 

  • 180g Lindt Dessert Premium Dark, chopped into chunks (set half aside) 
  • 30g Butter 
  • 1each Egg 
  • 85g Caster sugar 
  • 25g Plain flour
  • 5g Cocoa powder
  • Pinch fleur de sel, sea salt
  • ¼ Bunch fresh mint, picked 
  • 80g Pure icing sugar
  • 45g Unsalted Butter, soft

To finish 

  • Little extra Lindt Dessert Premium Dark, melted

Preheat

Preheat the oven to 175°C

Melt together the half of the chocolate and the butter. Set aside to cool slightly.

Lightly whisk together the egg and the sugar.

Mix in the cooled chocolate butter mixture and then the dry ingredients and chocolate chunks.

Grease a mini muffin tray and portion walnut sized pieces into each portion/ cavity.

Bake for 10-12 minutes. While still warm, press the surface with a ice cream scoop or a round spoon to create an indentation.

Allow to cool slightly and remove from the tin while still slightly warm.

For the Crème combine the mint and the icing sugar in a food processor and blitz until smooth.

(You can also use mint oil instead of fresh mint)

Combine the mint sugar mixture and butter in a bowl and whisk until light and fluffy.

(If the crème is a little firm, add a little milk)

Top each chocolate Fudge Cookie with some crème and finish with a little extra melted chocolate.
