Double Chocolate Cake

  • 180g Lindt DESSERT Premium Dark 
  • 100g Butter
  • 100g Sugar
  • 3 Eggs, separated
  • 100g Almond meal
  • 25g Plain flour
  • Pinch of salt

Preheat

Oven to 175°C.

Grease cake tin.

In an electric mixer

Cream butter and sugar until light and fluffy, add one egg yolk at a time, beating well after each addition.

Melt

The chocolate and mix into the butter mixture.

Sift

The almond meal and flour, fold into the chocolate mixture.

Whisk egg whites

And salt to soft peaks and fold into cake mixture.

Pour batter

Into cake tin and bake for 25 minutes or until a skewer comes out clean.

Once cooled

Top and layer with Chocolate Ganache
