Meringue Easter Nest
Makes 5 nests (8cm Ø)

Crisp meringue and smooth silky chocolate ganache provide the perfect little nest for your favourite Lindt Easter chocolates.

  • 50g Egg whites (from about 2 eggs)
  • 65g Caster sugar
  • 35g Icing sugar, sifted
  • Chocolate Ganache
  • 90g Lindt DESSERT Premium Dark  
  • 90ml Cream 
  • 20g Glucose 
  • 20g Butter, unsalted 
  • Splash Amaretto (optional)
  • Lindt Easter chocolates to fill

For the meringue

For the meringue preheat the oven to 80°C

Combine

Combie the eggwhites and half of the caster sugar in the bowl of your electric mixer and whisk attachment until stiff peaks form.

Gradually

Gradually add the rest of the caster sugar one teaspoon at a time.

Once

Once all sugar is incorporated and the mixture is stiff, take off the machine and gently fold in the icing sugar.

Place

Place meringue mix into a piping bag with a star nozzle.

Draw

Draw five 8cm circles on the back of some baking paper.

Turn paper around to the clean side and pipe nests by starting in the middle to create a base, then circular motion to the edges of the circle to form the side.

Bake or dry

Bake or dry for about 3 hours with the door slightly ajar.

To make the ganache

To make the ganache combine the cream and glucose in a saucepan and bring to the boil.

Add the chocolate and mix until smooth and glossy.

Add butter and stir in.

Mix in flavour if using.

Set aside to cool.

Generously

Generously fill each nest with chocolate ganache and top with Lindt Easter chocolates.
